La Manufacture Chablis Six Pack Collection

La Manufacture was established by Benjamin Laroche after his family sold Domaine Laroche and he was left without vineyards to work with to make wine. Benjamin’s love of the region and a desire to continue making wine made him reach out to friends and growers that he had a long relationship with to purchase fruit given the crazy price of land in Chablis made it impossible for him to buy back in.

These arrangements are well over 10 years old now and they have worked extremely closely with each grower from the beginning to ensure they produce the fruit that they would like to work with to utilise the small prime plots of vines they’ve secured.
The grapes here are all organic and special care is taken in the vineyard with rigorous sorting to only bring in the best fruit which is full of verve and electric acidity.  
 
The winemaking is fairly strict and traditional, the grapes are gently pressed with a pneumatic press and settled, then the juice is racked off its lees into tank to ferment cool, lasting about two weeks. After which the wine goes through malolactic fermentation in barrel and aged for 18 months in mainly older oak barrels with only a tiny percentage of new oak employed. There are very few reviews for the wines given the small production and high demand for these artisanal wines. Demand locally in Paris sees them sell through rapidly and therefore no need to submit to reviewers.
