2021 Ephemera Lateral ‘Bianco’ Vermentino

Rhen Dodd and Janelle De Gabriele lead Ephemera, Ephemera Wines is an exploration of the Victorian terroir with a sustainable and thoughtful viticulture mindset. Destemmed fruit is fermented on its skins for 6 days, then pressed to aged barriques and hogsheads to complete natural primary and malolactic fermentation, and rested on full lees for 3 months. The result is textural delight, combined with refreshing salinity, and a glossy mineral backbone.
