His focus is on alternative varieties that speak of where they are from and with over a decade as a chef building a deep understanding of flavour. This Gruner Veltliner from Tumbarumba shows plenty of lime zest, green apple and a touch of something riper, crisp refreshing acidity and a mineral driven finish.
