Jean Dauvissat Terroir expression at it’s finest, your first taste of this will take you to a place. A place where the land is made up of clay and limestone scattered with fossilized oyster shells, known as Kimméridgien soil. This place is of course Chablis.
Like all good vignerons Dauvissat takes great care in the vineyard managing the land as organically as possible and controlling yields to maintain concentration of fruit. Even in the warmer vintages Dauvissat has managed to achieve that hallmark steely acidity. With five premier cru sites and several other vineyards across the appellation Fabien Dauvissat is a Chablisien rising star bottling under the Jean Dauvissat label.
