2021 Mayer Cabernet

Midweighted and lifted with a big whack of flavour and fragrance; bay leaf, casis, dark blackberry and grippy tannin. Another one from the St Hubert vineyard, same as the Merlot. A variety already known to have herbal notes you’d think a 100% whole bunch fermentation would lead to an overly green disjointed wine. However with Timo’s expertease this wine is layered with brambly fruit flavour, is herbaceous and has fine tannins all in perfect balance.
