Billecart-Salmon Brut Sous Bois Champagne
The typical Billecart non-vintage style is one of extreme elegance and finesse. Whilst this special bottling departs from these elements, it is no less precise.
Sous bois literally translates as ‘under wood’. Owing to this champagne being vinified and aged in oak barrels, giving additional weight and power compared to those held only in stainless steel tanks . It takes inspiration from history, when wines would undergo all fermentation and ageing in old oak casks.
Composed of equal parts of the classic champenois grape trio from the villages these grapes flourish. Chardonnay from the Côte des Blancs, powerful pinot noir from the Montagne de Reims, Aÿ and Mareuil-sur-Aÿ, and finally meunier from the right banks of the Vallée de la Marne.
'Deeper colour with fine bubbles. Rich fresh citrus and white stone fruit echoed by buttered brioche and suggestions of toffee. 6 to 7 years on lees adds creamy mouthfeel, further enhanced by the purity and finesse of the fruit.'
No aperitif style, this amply textured, gastronomic wine deserves a bowl of freshly steamed mussels and crusty buttered bread.
