With an average vine age of over 30 years, the estate practices sustainable viticulture, completely free from herbicides and insecticides. The soils are regularly ploughed to maintain vitality and ensure proper aeration, fostering a thriving ecosystem within the vineyards.\u003c\/p\u003e\n\u003cp\u003eWild yeast primary and fully complete malolactic fermentation, followed by 10 months aging on fine lees in stainless steel vats with minimal action. This Petit Chablis is bright, lifted and displays an almost costal feel, highlighting Chablis ancient seabed soil composition. Lemon zest, green apple and white peach sit over crushed oyster shell and wet stone.
