2021 Josh Cooper Dash Cabernet Sauvignon

Dash farm sits just outside the Macedon GI in Central Victoria, sitting at 450m above sea level on Mt Alexander facing south toward Macedon on granitic soils. This is an extremely late ripening site for cabernet, harvesting the fruit in April.

The fruit was all destemmed and partially foot stomped before loading into open fermenters, where they remained for three weeks while fermentation began. Some pumping and plunging before a gentle basket press and then sent to oak. Before bottling the wine received a small amount of sulphur before bottling.
