2021 Josh Cooper Dash Farm Chardonnay

Dash farm sits just outside the Macedon GI in Central Victoria, sitting at 450m above sea level on Mt Alexander facing south toward Macedon with granitic soils resulting in chardonnay with taught freshness, concentration and drive. 

Once the fruit arrived at the winery it was partially crushed and very gently pressed and then settled overnight. It was then transferred to a mixture of old and new oak for fermentation and lees ageing, which lasted 12 months. Before bottling it spent some time in stainless steel on fine lees and was bottled without filtration and a small amount of sulphur.
