Lovely guy, lovely wines, Dom Valentine is a rising star in the Yarra valley wine scene. He’s also playing around with some more a-typical varietals, in this case turning his attention towards Greco; a grape with its history rooted in Southern Italy, and some also claim Greece. There’s some serious wine making here. Dom’s using fruit sourced from Heathcote, and applying whole bunch pressing and fermenting in barrel. There’s an effortless flow of white peach, quince, pears and almonds. A faint sheet of ginger lies across the top of a long and persistent finish.
